Fall Sandwich Cookies

Fall flavors and warm spices been calling your name? Have I got a combo for you!!

Leaves and falling and ovens are warming up! It's time to make use of yours and whip up a fall treat!

The maple cookies include a medley of war, spices and are soft and delicate. Sandwiched between them is rich and flavorful pumpkin butter. The tang of the pumpkin and the delicate maple flavors pair wonderfully with one another for a perfect fall combo.

Maple Cookies


I used one of my favorite bloggers' (Broken Oven Baking) recipes for her Maple Pecan Cookies and just did not mix in pecans as sandwich cookies don't quite need that extra texture. Check out my notes:


Baking/Low FODMAP Notes

  • I left out pecans for this recipe

  • I used only about 3/8 cup of maple syrup just so as to not overwhelm with flavor when we also have the pumpkin butter

  • Did not do cream cheese frosting because of the sandwich cookie as well.

  • I would err towards 14-15 minutes of baking as those that I took out about 12 minutes that were starting to brown ended up being too gooey in the center and a bit underbaked (still tasted great though!)

  • This is such a delicious cookie!!


Pumpkin Butter


I used the recipe from Fifteen Spatulas.


Baking/Low FODMAP Notes

  • Canned pumpkin is Low FODMAP at 1/3 cup per meal. So just make sure you're not eating spoonfuls and spoonfuls. 1-2 Pumpkin sandwich cookies are okay!

  • Super easy and tasty!


Directions:

  1. Make pumpkin butter according to directions and let cool. Set aside. You may have left over (You can put in an airtight container and store in fridge for up to two weeks! Use it for toast, bagels, you name it!)

  2. Bake cookies according to directions. Let cookies cool for the 10 recommended minutes plus an additional ten.

  3. Scoop about a tablespoon and a half of pumpkin butter onto the bottom of one cookie. Spread evenly across the cookie. Place another cookie bottom on to the pumpkin-buttered side to make a sweet sandwich.



4. Store in airtight container for up to 5 days.
