Low FODMAP Fall Garibaldi Biscuit

GBBO week two: Biscuit Week!
I love to bake along with the Great British Bake Off, but sometimes that treats are not always the most low fodmap friendly. For example, the garibaldi biscuit, the technical challenge for week 2, includes liqueur soaked currants or dried fruits for the filling. Unfortunately, while a few raisins may be okay to handle, a filling of liqueur soaked ones is a bit hard to handle for most IBS/ gut issue sufferers. Low FODMAP and Fall solution= Pumpkin! 🎃

Garibaldi biscuits are sandwich cookies from the UK which include a spiced currant filling baked between two thin layers of crispy baked biscuit dough. I used a basic garibaldi recipe and switched out the currants for pumpkin butter instead! This makes it more Low FODMAP and Fall friendly!
Because the pumpkin butter packs more moisture, you do lose some of that snap that the GBBO always calls for during biscuit week, but it leaves a happy stomach and is still absolutely delicious! Check out the recipe links and notes below to make your own!

Notes:
Because I replaced the filling with pumpkin butter you will not need the currants or liqueur.
If you do not have caster sugar, you can give granulated sugar a quick blitz in the food processor or blender (5-10 seconds).
Milk: I used lactose free skim milk, but choose your low fodmap milk of preference!
The Cinnamon Sugar on top is definitely an optional choice. I went for it!
Swap the step of sprinkling the currants with spreading the pumpkin butter.

Canned pumpkin is Low FODMAP at 1/3 cup per meal. So just make sure you're not eating spoonfuls and spoonfuls. 1-2 Pumpkin butter Garibaldi biscuits would still be Low FODMAP!
