A versatile and light cake perfect for any occasion!
Cakes have not been my speciality, but I want to improve, so I made a Fourth of July Cake! However, I am not yet comfortable experimenting on creating my own ratios/ingredient list for cakes, so I Low FODMAPed a recipe from Butternut Bakery (one of my favorite recipe bloggers). The strawberry flavor is perfect for any summer occasion, so the cake itself is great to celebrate anything you want (even just a nice afternoon). It is a moist, and fluffy cake with a light strawberry flavor! I would highly recommend.

This recipe was easy to FODMAP-ify and was super tasty! I enjoyed making it. Look at my recipe substitutions and notes below for some tips!

Low FODMAP Substitutions
If you cannot tolerate regular flour, I would suggest a gluten free alternative like almond or coconut flour. Jenna (the baker of Butternut Bakery) notes this option at the bottom of her notes.
Sour Cream-I substituted plain lactose free Fage Greek Yogurt! Great Low FODMAP option! I also personally added a squirt of lemon juice to make up for a bit of a loss of the sour of the sour cream.
Decoration: I used a just ripe banana to top for the decoration.
Notes
Flour: I just used regular flour because I did not have cake flour. It turned out just fine!
Blended Strawberry: The recipe says to use a food processor, which would be great! I just had already used my blender for something else and didn't want to dirty both, so I used a blender which worked just fine! I just had to be careful not to let it get too blended, so just read her notes about what the consistency should look like.
Strawberries are Low FODMAP at 5 medium strawberries. Because this recipe only calls for a cup (I used about 7 strawberries), having a 2 or even three pieces would be more than safe strawberry-wise.
I did not use her frosting recipe because I wanted to use cool whip! (Ended up using Kroger light whipped topping, which worked very well and did not taste much different from the full fat version!)
I decorated with blueberries, strawberries, and banana to make a USA flag!
