Pumpkin Spice Cake

A great way to use puree pumpkin inspired by Cake Week of the Great British Baking Show! 🎃

"So cute and sweet!"
Ingredients:
2 cups of granulated sugar
2 sticks (1 cup) of almost fully melted butter
2 large eggs
1/2 cup purée pumpkin
1 cup of almond milk (or other milk of choice).
1 tbsp of vanilla
2 cups of flour
1 tsp of baking soda
1+ 1/2 tsp pumpkin pie spice
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp cinnamon
Method:
Combine and mix dry ingredients( 2nd half of above list beginning with flour) in separate bowl. Set aside.
Mix butter and sugar until creamed (with mixer usually about 5 mins on low speed for me-with a side scrape in the middle)
Preheat oven to 350 degrees F.
Add eggs, vanilla, pumpkin, milk.
Slowly mix dry ingredients ( I usually do 1/3 at a time) into the wet ingredients till thoroughly mixed.
Pour into sheet cake pan (baking sheet with high sides).
Bake at 350 degrees F for about 30-35 minutes or as long as it takes for the a toothpick or knife inserted in the center comes out clean.
Cut into two layers and then cut out 3 little circles and 1 medium circle for each mini pumpkin cake.
Frosting-You can make your own, but I was admittedly on a time crunch and just colored some store bought frosting, which I can tolerate at a serving of about a cake slice.
Assembly:
Layer (bottom to top) a small circle of frosting, one little circle layer, frosting, the big layer, frosting, little circle layer, frosting, last little circle!
Using food coloring dye the frosting orange. With a knife spread the frosting around the outside of the cakes and then use a toothpick to make the little grooves (use picture for guidance).
Using only a little frosting and not even a full drop of dye, dye some frosting green. Place it in a baggie, cut small opening in the corner, and then squish the frosting to that corner. That will serve as a piping bag to squirt the little leaf on the top.
Low-Fodmap Notes
I made this recipe low fodmap, but if you want to make it fully gluten free, sub your choice of gluten free flour!
