99 Cupcakes ☘️

No, not 99 actual separate cupcakes- only 16!
Have you ever had a 99? If not, you need to try one ASAP! But until you can just head over to Ireland or the UK quick, these 99 Cupcakes are a delicious placeholder.
A 99 is a vanilla soft serve cone with a Cadbury Chocolate flake bar stuck in-pretty traditional in Ireland! Sometimes different flavored syrups are added as a topping as well! It is a delicious treat and I cannot rave enough for this simple but lovely treat! Try a cupcake version this St. Paddy's day season!

Some beautiful 99 Cupcakes!
The first time I had a 99 was when I lived in Ireland for the summer. This was a summer of where my IBS was flaring a bit more often than usual. However, I was in a foreign place, just learning how to really cook, being offered a lot of new food and treats, and not knowing much about how to handle my IBS yet all! Although a 99 is a regular soft serve and does include lactose, I gotta say, if you are gonna take the risk for anything-I would recommend a 99. It is light ice cream and it did not usually by itself cause IBS symptoms.
99s are a common treat in Ireland, and, when I lived in Dublin for a summer, I really loved treating myself to them occasionally! Enjoy these cupcakes as an ode to the 99 this St. Patrick's Day season!
Cupcake Recipe
I felt no need to reinvent the wheel here. I just went for a classics Vanilla Cupcake! Recipe from Preppy Kitchen! They were great-moist and delicious!
Low FODMAP Notes on the recipe above:
Flour- Gluten is not a FODMAP, but I know that a lot of food that contain gluten can contain some irritants. Subbing almond or a mixture of almond/coconut flour is a good option for gluten free.
Sour Cream- I subbed sour cream for the same amount of Lactose Free Greek Yogurt from Fage plus a tsp of baking soda (in addition to the baking soda already in the recipe). Works great!
Whole milk- I subbed for unsweetened almond milk in the same amount! I used Califia Farms almond milk! Works great!
Frosting
Almond Milk/Non Dairy Reddi Wip
I just used Whipped Cream to be my frosting because I felt it best represented the 99 ice cream shape! I can handle a little bit of regular whipped cream, but Dairy Free Reddi Wip is definitely choice #1!
However, any type of frosting that you like is certainly appropriate!
Toppings!
Chocolate "Flake"
My chocolate Flake imitation (Flakes are not sold in the US :( ) is pretty easy and gets close enough for my liking.
1/4 Cup dark chocolate chips (less lactose than milk chocolate)
1/2 Tsp of coconut oil
parchment paper
Steps:
Place chocolate and coconut oil in a microwave safe bowl.
Microwave for 30 seconds, mix up.
Microwave for 10 more seconds.
Carefully spread melted chocolate in a fairly thin small rectangle (1 in width by 2 in height). Cup parchment paper around the square. While chocolate is still wet, roll up so that it creates a little rolled up cylinder. Repeat for however many cupcakes you made.
Place in fridge for a couple minutes.
Remove and carefully remove chocolate from parchment paper. You may get some breaking/flaking, but it will still look (and definitely taste) okay! Don't worry!
Optional Toppings:
Strawberry dessert topping.
You can drizzle some of this topping over your frosting to make a strawberry-topped 99 if you would like! This is a common version of the treat!

I also filled some of my with a chocolate filling for an extra flavor burst! I used this chocolate filling recipe from Wilton. Be sure to follow carefully!
