"Moist, sweet, and delicious!"
Recipe from Butternut Bakery Blog!
Low-Fodmap Notes/Changes:
Apples- The granny smith apples used in this recipe are only low fodmap at a serving of about 2 teaspoons. Thus, I recommend eating no more than one slice per day of the bread. One delicious slice should be tolerable. Taking a break between days may even be advisable if you would like as we want to be careful of fodmap stacking.
Milk- I used unsweetened almond milk rather than regular. You can also use lactose-free milk or any other milk you usually do.
My favorite brands are Simply Almond and Califia Farms as they have only a few simple ingredients.
You can easily make this Dairy-Free by using vegan butter in the oat streusel topping!
Recipe Notes:
Oat Streusel- I usually half the recipe for this topping as I find that it is just the perfect amount.
Glaze- I find that pouring on the glaze can be a little much for me personally (but I would recommend trying it first). So I drizzle it, and thus, also half that recipe.
Yield- I find that the recipe makes a bit more than just a loaf in a regular loaf pan, so I also make some muffins (usually 6-8) along with it. Those usually take about 30 mins in the oven.
Timing- I usually find that the loaf takes about 15 minutes longer than the recommended time as well.
