Banana and Blueberry Oat Bars

Healthier Banana Bread in a fun and easy bar! Perfect for a sweet treat for Easter Brunch.


These blueberry banana bars are an easy and great Low FODMAP option for a great spring-time treat! They are incredibly easy to share and have so many great health benefits from the different fruits, grains, and healthy fats in them!

These bars are so delicious. They are a banana bread like structure but baked in a brownie/bar like form. The tarter punch from the blueberries combines with the sweetness of the bananas and other sweeteners, to balance each other nicely. They are light, fluffy, and soft, but have a great flavor from the several different ingredients.


These ingredients are often things available around the house! The main ingredients are a just yellow banana, frozen blueberries, flour, brown sugar, oats, and, if you want coconut. Thus, they are fairly easy to put together and enjoy yourself or with friends! They are also great treats to serve for an easter brunch for something sweet!


Banana and Blueberry Oat Bars

Yield: 8 Bars

Time: 40 Minutes (18 Cook time)


Ingredients

  • 1/2 cup of flour

  • 1/2 cup and 1 tablespoon of rolled oats

  • 1/4 tsp of cinnamon

  • 3/4 tsp of baking powder

  • 1/4 tsp of salt

  • 1/2 cup of brown sugar

  • 4 tbsp of unsalted butter (softened)

  • 1 large egg

  • 1/2 medium just yellow banana mashed

  • 1 tsp of maple syrup

  • 3/4 cup of frozen blueberries

  • 1/4 and 1 tablespoon of unsweetened coconut (optional) (or if you want another source of healthy fats, you could add in chopped almonds).

Directions

  1. Spray (with cooking spray) or line a 8X8 pan with parchment paper.

  2. In a medium size mixing bowl combine the flour, oats, cinnamon, salt, and baking powder. Set aside.

  3. In a large mixing bowl or with a stand mixer, cream (mix) together the butter and brown sugar. If using a stand mixer mix on medium for about 3-4 minutes, pausing and scraping down the sides after about two minutes. If mixing by hand, it will likely take you longer (about 5-7 minutes of mixing). Mix till light and fluffy consistency. You should not see any butter chunks.

  4. Pre-heat oven to 350° F.

  5. Crack and mix in the egg.

  6. Mash and add banana and maple syrup. Mix both in completely.

  7. Add in half of dry ingredients and mix till combined. Add in the other half and again mix until combined.

  8. Mix in blueberries by hand or on the lowest setting on the stand mixer. Ensure that they are evenly distributed.

  9. If adding coconut, similar add and mix in.

  10. Pour mixture into lined/sprayed pan and spread out evenly so that there is about 1/2 an inch thick height to the mix (it may not reach edge to edge either width or lengthwise).

  11. Place in oven for 17-18 Minutes. Check for slight browning at edges and a clean toothpick inserted through the center.

  12. Let bars cool and rest for at least fifteen to twenty minutes. Then cute into slides to your liking!
