Create your own: Nice Cream! šŸŒ

Trying to eat a bit healthier, but still want the taste of ice cream? Also tired of too basic ice cream or mix-ins you don't want? I've got your perfect dessert! Create your own Nice Cream. It has a banana base and is SO simple to make. I made mine cookie-dough, graham cracker, and caramel, and have included the recipe for that below!


This is low FODMAP per serving and delicious. NO DAIRY if you don't want, as it is banana-based! But so much banana you say! Don't worry, you just have to make sure to freeze the bananas before they get too yellow. Absolutely no brown spots! Furthermore, if you are a banana-lover, this will add to the experience of the "ice cream."


My add choices were low FODMAP per serving, and you can check these out below! I love that I can freeze this and enjoy just like a pint of Ice cream.


Create-Your-Own Banana Nice Cream!

Time: 5 Minutes

With cookie dough add-in: 15 Minutes

Serving: 1/3 of Nice Cream


Ingredients:

  • 3 medium frozen bananas (frozen before any brown spots and preferably just turning yellow).

    • Break these up so that they are at least in halves/quarters

  • 1/3 cup of Lactose-free milk of choice. To add some protein and keep fat low, I used Fair life skim lactose free milk. But this works just as well with a non-dairy milk like almond milk!

Add-in Ingredients that I used:

Healthier/Low-FODMAP Cookie Dough

  • 1/2 +1/3 Cup of almond flour (I used Simple Truth Brand!)

  • 1 tbsp of maple syrup or honey (I used Kroger Honey)

  • 1 tsp vanilla

  • 1 tbsp lactose free milk of choice (I used Fair life skim milk!)

  • Dark chocolate chips (measure with your heart, but I would not recommend going over about 1/2 cup as that would risk the measurement being a bit above low-fodmap serving size per serving).

Graham Cracker

I could not find the recommended low FODMAP serving size for graham crackers, however, going off of other bread/wheat products, I would assume that 1 total graham cracker should be fine. If the fructans in wheat are a HUGE trigger for you, maybe avoid this add-in, but in general I would bet it's okay. Please consult a dietitian for official advice here.

  • one graham cracker (cracked into small pieces)

Caramel

  • about 2 tsps of sugar free Smuckers caramel syrup (I did not measure this but found it easier to just squirt out of the bottle).


But add in anything you like!

Some options:

Dark Chocolate Chips, strawberries, blueberries, Oreos (limit two a couple I would guess), etc.!


Directions:

Nice Cream:

  1. Add frozen bananas and milk to blender and blend on low for about 30 seconds until there is a soft, but not yet quite creamy consistency.

  2. Mix in add-ins of choice! I transferred the mixture to a bowl first as I found it easier, but you can keep in the blender should you like!

  3. Enjoy now or transfer to freezer-safe container for storage.

"Cookie Dough:"

  1. Mix all ingredients in a bowl until consistency is dough-like. Then roll into little balls with your hands! They are then all ready to enjoy or freeze. I added about half to the ice cream and froze the rest for a treat when I want! (Pictured below with graham-cracker, ready to be mixed!)
