Blueberry Crumb Cake: Low FODMAP

For Easter Brunch, I was looking for a breakfast cake that would please everyone, but wasn't boring. Luckily I follow Dessert Now Dinner Later on Instagram and she has a lovely blueberry crumb cake recipe! I baked this on Saturday afternoon before Easter Sunday and it was perfect for the occasion. I used some low fodmap products to make this more IBS/Gut friendly. Check out my swaps/notes below!

This cake is sweet, moist, and, yet, also crumbly! Fresh blueberries add in freshness and a "pop" to balance out the flavor profile of the cake so well! The crumble "tops" off an already delicious cake and adds the perfect texture and added sweetness. I would highly recommend!

I modified the recipe from Dessert Now Dinner Later.
Low FODMAP Notes:
I swapped the buttermilk for 1 cup lactose free milk (almond milk would also work) mixed with 2 teaspoons of lemon juice. Like Amber (blogger) suggests, mix and let sit for 5-10 minutes before mixing in.
I used regular all purpose flour as it does not trigger my IBS symptoms, however, should you like a lower FODMAP alternative, I would suggest something like Bob's Red Mill gluten-free flour. I do not suspect that almond or coconut flour would work quite as well in this cake.
