Chocolate Strawberry Cups

Cute little desserts for your cutie 😉

This is a fun and easy dessert with a short bake time and lots of simply chilling.
"Chocolate and Strawberry-your favorite V Day Combo!"
We all love chocolate on Valentine‘s Day, whether it be eating it off the bar while we watch a Rom Com with friends or eating fancy ones from a significant other! But sometimes you want a little freshness as well! What better to add freshness than something pink/red for V day! These chocolate strawberry cups mix all your favorite flavors in a cute little mini package! Enjoy graham cracker crust, strawberry geleé, almond butter, and dark chocolate layers!! Perfect to gift or enjoy yourself this February!
Chocolate Strawberry Cups
Time: 2.5 hours
Yield: 2 dozen mini-muffin sized cups
Ingredients
Crust (halved recipe by allrecipes)
¾ cup crushed graham crackers
1/4 tsp of cinnamon
2 tablespoons of sugar
1 teaspoon pure vanilla extract
3 tsp of melted butter
Strawberry Filling:
1 cup chopped strawberries
3 tablespoons of sugar
1 teaspoon lemon juice
1 teaspoon of water
1 tbsp and 1 tsp of cornstarch
Other layers:
layer of almond butter
1/3 cup of dark chocolate chips (melted with 1 tsp of coconut oil)
Method
Make the graham cracker crust according to the directions, but STOP before the baking. The crust should be pressed into the bottom of each part of the mini muffin tin. Bake for 5 mins at 375.
Let cool for at least 10 minutes (15 is better).
Once cool add thin layer of almond butter on inside of cup.
Let chill in the fridge while you make the jelly.
Strawberry Filling
Pour strawberries into heated saucepan on medium on the stove. For about 2 mins mash the strawberries. Add sugar and lemon juice and continue mashing until there are no considerable chunks.
Bring to a boil and then add water and cornstarch. Do any additional mashing you see fit! Then mix thoroughly until it had achieved a thicker consistency.
Remove from heat and let cool completely.
Take granola crust cups with almond butter out of the fridge.
Fill each cup with a 1/4 inch thick layer of filling.
Place back in fridge for at least an hour.
Chocolate top layer
Add dark chocolate chips and coconut oil to microwave safe bowl.
Microwave about 30 seconds. Mix and place back in microwave until completely melted. Stir carefully.
Remove granola cups with almond butter and strawberry filling from fridge.
Spoon a little bit of chocolate on the tops of each of the cups on top of the strawberry filling. Carefully spread out to cover over all the strawberry filling.
Place back in fridge and chill for an hour-1.5 hours until chocolate is set.
Enjoy and gift to a special someone right then or store in a DRY and cool place for up to 3 days. Then you can place in fridge to last another 2-3 days (this will make the granola a bit more moist/crumbly so just be aware).
