Banana Nut Muffins, Low FODMAP

Updated: Apr 3, 2023

A classic you gotta love!

They are super moist and flavorful!

I love banana bread and banana nut muffins, but often they are made with very ripe bananas that make my IBS flare. I Low-FODMAPed this already existing recipe so that it would be more IBS friendly! Happy baking and eating!

Banana Nut Muffins

Recipe:

They are so moist, which I find to be the most important thing when baking muffins! They are also a pretty healthy muffin option as they have some healthy fats with the walnuts and some nutrients from the bananas!

Low- FODMAP Notes

  1. Bananas-Use unripe bananas or just yellow. There should not any brown on the bananas. These bananas will be a little firmer and less liquidy so you will likely need to spend a little more time mashing and mixing them to achieve the desired consistency for mashed bananas.

  2. Milk- I used almond milk instead of whole milk and the muffins turned out just great! You can also substitute other lactose-free milk options and have similar results!

  3. Flour- I find no triggers with regular flour, but if you are searching for a gluten free option, you can sub a mixture of almond and coconut flour. If you use almond milk, you may want to use coconut flour more heavily than the almond flour to avoid an overload of almond flavor.

  4. Walnuts- Walnuts are Low FODMAP at 10 nut halves. With the chopped walnuts in this recipe it will be much less than that in 1 and even two muffins.
