Low FODMAP Cowboy Cookies

Impress all your family and friends with these delicious and fun-filled cookies!


These cookies are fairly easy to make, but you will need a few ingredients! The cookie aims to please so you cannot leave out the amazing chocolate, coconut, or nuts that are added to this base oatmeal cookie! But don't worry! With my low fodmap notes, even for this complicated cookie, there shouldn't be any gut complications with the low FODMAP diet.

Not your regular oatmeal cookie right here! You have chocolate, coconut, nuts, and more! A lot of great textures and flavors working together to give you a rich and interesting cookie to enjoy at any time.

They will truly take you on a ride! While they do require a lot of elements, it's just about quickly mixing them in. It is so worth it! They are great because most of the ingredients do not contain many FODMAPS. So bake and enjoy with the recipe link and notes below!

Notes

  • Use Dark chocolate chunks/chip instead of semi-sweet in order to reduce lactose content.

  • The walnut serving in each cookie is enough that you will be able to enjoy at least 2 cookies at a time safely. You could likely go for three, but you know yourself and your tolerances best!

  • NOTE: I can handle the fructans in wheat okay, but if you do not, I would recommend using a mixture of two of the following flours to sub for AP: Almond, Oat, Coconut. The flavor that each of those carries goes well with the cookies!
