Low FODMAP Carrot Zucchini Soup

Delicious and easy soup perfect for winter weather. Recipe from Karlijn's Kitchen
I made this easy and absolutely delicious soup as meal prep for the week. It is a great dairy free and low fodmap option for any night or meal prep! I made a few changes to the recipe to fit my liking! See the below notes!

I love a good soup, but I don't want the same tomato or chicken soup every time. This unique option combines some great vegetables and is packed with flavor and does not disappoint. It also only requires a few ingredients and my substitutions seemed to work well! Read below for more on those!
Substitutions and notes based on my liking:

I had previously frozen zucchini that I used and it still worked well. I thawed it a little bit before, but not fully. It worked well because zucchini tends to cook more quickly than carrots.
I added fresh parsley, 2 teaspoons of chopped green onion (green parts only), and oregano leaves to the vegetables as they cooked in the pot.
I used Knorr Vegetable Bouillon cubes which work well for me, but I also always recommend Fody which has a vegetable soup base. I would assume using about 2 teaspoons of this would be equivalent.
I used Lactose Free Skim milk from fairlife instead of coconut milk simply because I had it. It seemed to work well! It likely added less flavor/tang than would have coconut milk, but it did not bother me.
I am not a huge fan of turmeric, so I just added a very small sprinkle of paprika and let the flavors of the green onion and parsley from before dominate.
I also would note that I am not sure this quite made four servings, more like 3. So just be on the lookout for that!
