An easy Low FODMAP Lunch Staple!
Salads are a great way to pack in a bunch of vegetables into one tasty adventure. This salad is especially tasty, but also keeps your gut on track. With the creamy cheese, crunchy nuts, and refreshing fruit this will not look like your boring cafeteria salad. Pair it with some multigrain or seeded crackers for a great source of carbs!

Sometimes salads can have a bunch of hidden ingredients that just get thrown in there, but making your own can also be a pain! This salad recipe is quick, easy, delicious, AND healthy! It uses common ingredients while still bringing a lot of flavor. Give it a try and you won't go back!
Low FODMAP "Call it a Waldorf" Salad
Ingredients
1 and ½ cup baby spinach
½ large carrot or 5 baby carrots chopped into small pieces
¼ cup chopped orange pepper
¼ cup chopped tomato
¼ cup fruit of choice (Recommendations: chopped apple, grapes (cut into fourths), or strawberries).
1 -1 ½ Slices of deli turkey (broken up into small slices) or ½ cup of cooked chicken
1/8 cup chopped walnuts
1/8 cup crumbled feta cheese
1 tbsp Fody Foods Balsamic Vinaigrette
(Optional) Add in seasonings like pepper, Fody's Lemon & Herb etc.
Directions
Directions should always be short and to the point.
Chop up carrots, pepper, tomato, and fruit. Set aside.
Add spinach to your bowl or tubberware container. Add chopped ingredients.
Add meat or protein of choice, nuts, and cheese.
If you are taking this as a lunch to go, put your dressing in a small travel container separate from the salad and mix before eating. If you are eating now, mix it all up!
